Paul's Birthday -

My buddy Paul's birthday was last weekend and I made him a cake (of course.) Sadly, I didn't get to try any, but he SWEARS it was fantastic, (organic vanilla with cream cheese frosting and fresh raspberries.)

For me, however, the highlight of the day was going to Galco's Soda Stop. What a fantastic place!!!! I really loved it. They have over 500 kinds of soda. Moxie, Abita, Jamacian Ginger Ale HOT HOT HOT and Cheerwine, just to name a few. The gent who runs the store is old school true and can answer you any beverage related question.

It kinda sorta won me over to Eagle Rock, that soda shop. Now I ready to discover everything that East Side neighborhood has to offer...

EASTER: the time for new Beginnings!

Beholds the delights of easter and Sunshines first foray into the world of writing about food and life. Yes, she won't deny it, she does believe that life is better with frosting and sprinkles... Or, the absence of sprinkles, puffy little animals in springtime colors. These little babies were the main event at an easter luncheon. I'm not in love with chocolate... so I only had one, but it was rich rich rich and delicious.

Normally, I make everything from scratch. But this was a hard week and I was a bit pressed for time... so, my double chocolate orange easter cupcake recipe is as follows:

1 Box of Trader Joe's Organic Chocolate Orange Cake Mix
2 Eggs
1/2 cup butter (melted)
3/4 cup water

1 Jar Trader Joe's Organic Chocolate Frosting

I know. I'm a totally sell out. at least it is organic!!!!

We even did a little easter appropo scene for the festivities.
